ust steps from Les Invalides in Paris’s 7th arrondissement, Prévelle marks a new chapter in the career of chef Romain Meder. After many years working alongside Alain Ducasse, notably at the then three-Michelin-starred restaurant at the Plaza Athénée, Meder has created his first restaurant of his own — an intimate, deeply personal space conceived almost as a country home in the heart of Paris.
His cuisine draws inspiration from his rural upbringing and close connection with nature. At Prévelle, a dish will often begin with a vegetable or fruit, explored in all its depth and character, while fish, shellfish or meat may play an almost supporting role. The result is an instinctive, plant-led and resolutely seasonal cuisine, shaped by the chef’s close relationships with more than a hundred producers and artisans.
The understated, welcoming interior reflects the same philosophy: there is little interest in ostentation, but a constant pursuit of authenticity and balance. Awarded its first Michelin star in 2026, Prévelle reveals Romain Meder at his most personal — offering a free-spirited, sensitive and contemporary vision of fine dining in which the ingredient always comes before technical display.
