Set within the prestigious Pavillon Ledoyen, just steps from the Champs-Élysées, L’Abysse brings together two distinct culinary worlds: the French haute cuisine of Yannick Alléno and the Japanese art of sushi embodied by master sushi chef Yasunari Okazaki. Their collaboration grew from a meeting in Japan and a shared ambition to build a bridge between their respective culinary cultures.  

Around an elegant pale-wood counter, guests can watch the sushi master at work, each movement executed with remarkable precision. Nigiri are prepared to order using exceptional fish, with meticulous attention given to the rice, maturation and seasoning. Alongside this Japanese craftsmanship comes Alléno’s distinctive French perspective, particularly his celebrated work with sauces, jus and extraction techniques.  

The minimalist setting, enriched by contemporary artworks, reinforces the restaurant’s sense of serenity and refinement. With just twelve seats at the counter, dining here feels intimate and deeply immersive. L’Abysse is ultimately much more than an exceptional sushi counter: it is a dialogue between France and Japan, where two culinary traditions meet with precision, respect and remarkable elegance.
